Sweet Potatoes

Ingredients:

4-5 medium sweet potatoes

1/2 Cup Unsalted Butter, melted

1/2 cup brown sugar (adjust to taste)

1 Teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 Teaspoon vanilla extract

1/2 Cup chopped pecans or walnuts (optional)

Mini Marshmallows for Toppings(optional)

Instructions:

Preheat Oven: Preheat your oven to 375°F°or(190°C).

Prep Sweet Potatoes: Wash the sweet potatoes thoroughly and pat them dry. Pierce each potato several times with a fork.

Bake Sweet Potatoes: Place the sweet potatoes on a baking sheet and bake for about 45-60 mint or until they are tender. Let them cool slightly.

Mixture Preparation: In a Bowl, Mix the Melted Butter, Brown Sugar, Cinnamon, Nutmeg, and Vanilla-extract.

Peel and Mash: Once the Sweet Potatoes are Cool enough to handle, peel off the skin and place the soft flesh in a mixing bowl. Mash the sweet potatoes until smooth.

Combine and Bake: Add the butter and spice mixture to the mashed sweet potatoes. Mix thoroughly. If you’re using nuts, fold them into the mixture. Spread this mixture into a baking dish.

Marshmallow Topping: If desired, top the sweet potato mixture with mini marshmallows.

Bake Again: Place the dish back in the oven and bake for another 10-15 minutes or until the marshmallows turn golden brown.
